Billy Beach is making his way to Bellevue!
Japonessa Sushi Cocina confirms expansion to Bellevue by Spring 2016 opening his second location in the newly planned Lincoln Square 2 building in Downtown Bellevue. The location will be the central hub to shopping, restaurants, office, residential and entertainment. Joining Japonessa will be the new W Hotel that will be opening in 2017.
For those new to Japonessa, it’s a Sushi Cocina featuring a Japanese core concept with hints of Latino flair. You can find traditional nigiri and sashimi to rolls decorated with jalapeño, cilantro, and mango. Chef Owner Billy Beach wanted to step outside of the traditional Japanese style restaurant and create a concept that would offer sushi lovers new and exciting flavors. The Latin influence was inspired by Billy’s fellow sushi bar chefs, whom he has been working with and trainingsince 1999.
Japonessa means “Japanese Woman” in Spanish. The restaurant is dedicated to Chef Owner Billy’s late mother, and is a symbol of gratitude to his sushi chefs who helped inspire this Japanese Latino concept.
You may have dined at some of Billy Beach’s other establishments such as Umi Sake House, Kushibar, Wasabi Bistro and his most recent Billy Beach Sushi and Bar located in Ballard. You may have tried the infamous “Bad boy roll” from Umi Sake House.
