Now Open: Beechers Handmade Cheese in Bellevue Square

Seattle’s favorite artisan cheese shop is now open inside Bellevue’s shopping center, Bellevue Square. The Bellevue opening will be its fourth store following Pike Place Market in Seattle, Seatac International Airport and New York in the Flatiron District. For those new to the Beecher’s crazy, Beecher’s is known for their Signature Flagship cheese, a semi-hard cow’s milk cheese with a uniquely robust, nutty flavor that is carefully aged for 15 months to fully develop its complex flavor and ever-so-slight crumble.

Another fan favorite is Beecher’s “World’s Best” Mac & Cheese. Made with an incomparable combination of the signature Flagship and Just Jack cheeses. Best when bubbly and hot.

Beecher’s Cheese was founded by Kurt Beecher Dammeier in November 2003. In 2002, having become firmly entrenched in the Seattle food scene, Kurt was walking through Seattle’s historic Pike Place Market and noticed that a long-time tennant had closed up shop. Inspired, he called the landlord, returned to his office and announced they were going into the cheesemaking business. With fond memories of his grandfather and his wheels of Stilton, it was a natural fit to name the business Beecher’s Handmade Cheese. You can read the full history here.
